Keto Coconut Raspberry Bars

These Keto Raspberry Coconut Bars are super indulgent, low carb, sugar-free, and a fairly accurate substitute for the real thing. Super satisfying - and it's gluten free, too!

YOU WILL NEED: Unsweetened coconut Fresh raspberries Sugar substitute Almond flour Coconut flour Protein powder Butter Almond milk Eggs Vanilla extract Baking powder Xanthan gum Salt

Cream butter and sugar substitute. Add eggs, almond milk, and vanilla, then mix in the dry ingredients.   Wrap and chill.

In a small pot, combine raspberries, sugar substitute, and salt. Simmer until raspberries break down and form a thick sauce, about 20-25 minutes.

Spread dough in a pan, pressing to form a crust of relatively even thickness. Spread raspberry mixture evenly over the crust.

Whisk eggs until foamy. Add sugar substitute, whisk until well combined. Add coconut and extract, stir to combine.

Spoon coconut mixture over the raspberry layer, gently spread to create a solid layer.

Bake until golden brown, allow to cool before cutting into squares.   Enjoy!
