Keto Pecan Pie Cookies

These keto pecan pie cookies are super addictive, festive, LEGIT - and only 2 grams of net carbs per cookie! Fantastic holiday flavor, in a cookie that does NOT feel like diet food - perfect for any Christmas cookie spread!

YOU WILL NEED: Chopped Pecans Vanilla Protein Powder Almond Flour Coconut Flour Sugar Substitutes Unsalted Butter Whipping Cream Large Eggs Vanilla Extract Spices Xanthan Gum Baking Powder Salt

Whisk together all dry ingredients - except sugar substitute - set aside. In a separate bowl cream butter and sugar sub until smooth. Add egg and vanilla, continue beating until the mixture is smooth again.

Slowly add dry ingredients mix to the mixing bowl of wet ingredients, and carefully mix until well incorporated and smooth.

Be sure to scrape down the sides of the bowl to incorporate everything into the batter. Once smooth, wrap dough ball in plastic film, chill for 1 hour. This is an important step for any gluten free cookie dough, don’t skip it!

Roll cookie dough into balls, arrange on lined cookie sheets. Gently use your thumb to make a wide indentation in each keto cookie dough ball.

In a small bowl, mix pecans, brown sugar substitute and spices. Add in heavy cream and vanilla, mix well. Fill each indentation with about a teaspoon of pecan filling, then chill 30 minutes.
