Keto Gingerbread Cookies

These Keto Gingerbread Cookies are fantastic - spicy, easy to work with, & low / no spread. Great for decorating with my sugar free royal icing! They're also gluten free, with great taste and texture - the perfect Christmas cookie!

Whisk together dry ingredients - except sugar substitute - until well combined, set aside.

Cream butter and brown sugar substitute until fluffy.  Add the eggs and vanilla, beating well to combine.

Slowly add dry ingredients, and carefully mix until well incorporated and smooth.     Wrap gingerbread dough ball in plastic film, chill for 1 hour. 

Roll dough out to about ¼ inch thickness.  Use cookie cutters to cut out shapes. Chill for 30 minutes.

Bake as directed in the linked recipe, allow to fully cool.
