Keto Rolled  Sugar Cookies

These Keto Sugar Cookies have it all: They're gluten free, have great flavour and texture, and don't spread - they're perfect for Christmas cookie decorating! Also: they're only 2 grams of net carbs per cookie!

YOU WILL NEED: Vanilla Protein Powder Superfine Almond Flour Coconut Flour Sugar Substitute Unsalted Butter Large Eggs Vanilla Extract Xanthan Gum Baking Powder Salt Sugar Free Royal Icing

Whisk together all dry ingredients (except sugar substitute) until well combined, set aside.

Cream softened butter and sugar substitute until smooth and fluffy.     Add the eggs and vanilla extract to the mix, beating well to combine.

Slowly add dry ingredients mix to wet ingredients, and carefully beat until well incorporated.     Wrap dough ball in plastic film, chill for 1 hour.

Lightly dust work surface with a little more protein powder.   Roll dough out to about ¼″ thick (can be slightly thicker). I like to use a rolling pin with adjustable guides for this - see linked post.

Use cookie cutters to cut out festive shapes, place cookies 2″ apart on prepared cookie sheets. Cover and chill for 30 minutes.

Bake as directed in the linked recipe. If decorating, use the tip there for perfectly flat cookies!
