Keto Peanut Butter Cookies

These keto peanut butter cookies are just like the real thing ... only low carb, gluten free, and with a hit of protein.  Super satisfying, too - and only 3 grams net carbs each!

YOU WILL NEED: Smooth Peanut Butter Unsalted Butter Sugar Substitutes Superfine Almond Flour Vanilla Protein Powder Coconut Flour Large Eggs Milk Vanilla Extract Baking Powder Salt Xanthan Gum Baking Soda

Combine dry ingredients - except super substitutes - set aside.

Cream butter, peanut butter, and sugar substitutes until fluffy. Add eggs, milk, and vanilla, beat until smooth.

Slowly add dry ingredients, carefully mix until smooth.   Wrap cookie dough and chill for 1 hour.

Roll balls out of the cookie dough, arrange on lined baking sheets. Gently press the tops of each cookie lightly with a fork, then bake as directed.

Allow cookies to cool slightly before removing from baking sheets.  Enjoy!
