Keto Lemon Cookies

These keto lemon cookies are super tasty, easy to make, gluten free, have a nice chewy texture AND have a good hit of protein!    A bright and sunny addition to your Christmas cookie baking - and only 2 g net carbs per cookie!

YOU WILL NEED: Vanilla Protein Powder Superfine Almond Flour Coconut Flour Unsalted Butter Sugar Substitutes Fresh Lemons Large Eggs Xanthan Gum Baking Soda Baking Powder Salt

Mix together the protein powder, almond flour, coconut flour, xanthan gum, salt, baking soda, and baking powder. Set aside.

In a separate bowl, cream butter and sugar substitutes until smooth and fluffy, scraping down the sides of the bowl as you go. Add the eggs, lemon juice, and zest to the mix, beating well to combine.

Slowly add dry ingredients mix to the mixing bowl of wet ingredients, and carefully mix until smooth.

Wrap dough ball in plastic wrap, chill for 1 hour.  This is an important step for any gluten free cookie dough, don’t skip it!

Roll balls out of the cookie dough, arrange on baking sheets.  Gently press the tops of each, flattening JUST enough to prevent rolling.

Bake as directed in the linked recipe, allow to cool. Enjoy!
