YOU WILL NEED:Frozen CauliflowerKielbasa SausageBaconChicken BrothCheddar CheeseMilkOnionXanthan GumGround Black PepperSaltSour cream, extra bacon, and/or green onions, for garnish.
Following the directions in the linked recipe, microwave the cauliflower until it’s easy to mash.While the cauliflower is cooking, cook bacon and onions until tender. Add kielbasa, continue cooking until the kielbasa browns.
Drain cauliflower, puree with a bit of the chicken broth until smooth.Add cauliflower puree to the pot, along with any remaining chicken broth. Bring to a simmer over medium heat.
Toss cheese with xanthan gum and add to the pot. Stir well, allowing cheese to melt.Once cheese is fully melted and combined, season soup with salt and pepper, to taste.
