Creamy Taco Soup

This creamy taco soup is quick and easy to make, hearty, and full of flavor. It may be low in carbs - it's keto! - and gluten free, but it's a delicious recipe the whole family will love!

YOU WILL NEED: Ground Beef Cheddar Cheese Beef Broth Cream Cheese Roma Tomatoes Green Bell Pepper Jalapeno Pepper Onion Garlic Olive Oil Spices Salt & Pepper Xanthan Gum

I like to get all the ingredients prepped before starting.  This soup whips up QUICKLY, so you don’t want to be fussing with ingredients as you go.

In a medium pot, brown ground meat in oil.  Add peppers, onion, and garlic. Cook until vegetables start to soften, then add the spices.

Add cream cheese, mix well to melt it. Add tomatoes, stir well to combine.

As the soup is cooking, sprinkle xanthan gum over the cheese, gently tossing to distribute it. This will prevent clumping.

Add cheese to the pot, then the broth.  Stir until the cheeses and broth melt together into a smooth soup.  

Garnish as desired, serve hot. Enjoy!
