    Cilantro-Lime Cauliflower Rice

    Low Carb Cilantro-Lime Cauliflower Rice

    Last week, we made my cilantro lime grilled shrimp, and we were trying to figure out what we were in the mood for, as a side.

    Grilled zucchini, for sure - we were grilling anyway, and it’s a favourite.

    I was in the mood for something “starchy” - well, starchy-replicating anyway - so settled on cauliflower rice.

    I’d also recently seen a post from a friend about Chipotle, so my mind was on that amazing cilantro-lime rice.

    ... so yeah, of COURSE we made cilantro-lime cauliflower rice!

    Cilantro-Lime Cauliflower Rice

    This turned out fantastic!

    I started out with frozen pre-riced cauliflower - thawed in the microwave - but this would also work with freshly riced cauliflower.

    If you’re new to cauliflower rice, all you need to do is:

    Cut the florets off the head of cauliflower, discarding the bulk of the stem.

    Chop the florets into small pieces.

    Pulse the florets in your food processor until they’re really small, and (vaguely!) resemble rice.

    You can even use leftover pre-cooked cauliflower rice for this - just warm it up and add the flavourings.

    You won’t need to actually cook it, so keep an eye on the texture!


    Jalapeno Variation

    Want a little spice?

    Finely chop up some jalapeno - anything from ½ a pepper and up! - and sautee it with the onion.

    Uses for Cilantro-Lime Cauliflower Rice

    This recipe is fantastic as a side dish for grilled food, especially when the grilled food is marinated in something citrussy, something spicy ... or a combination of both.

    Low carb “burrito bowls”

    Grilled or BBQ meat.

    Low carb wrap burritos

    Asian or Middle Eastern meat mains

    How to Make Low Carb Cilantro-Lime Cauliflower Rice

    Full recipe follows, here's the pictorial overview:

    Prepare your ingredients: Chop the onion, slice the green onion, press the garlic, chop the cilantro, zest and juice the lime.

    In a large pan, cook onion in olive oil until soft and translucent. Add garlic, cook for one more minute, stirring constantly.

    Add cauliflower and chicken stock, stir well to combine.

    Cook - covered - for 5-6 minutes, or until cauliflower is tender. (Stir every minute or so).

    Once it reaches desired texture, remove from heat.

    Add lime juice and zest, cilantro, and green onions. Stir well, season with salt and pepper, to taste.

    The cilantro, green onions, and lime being added to the cauliflower rice, and mixed in.

    Serve hot!

    Low Carb Cilantro-Lime Cauliflower Rice

    Ingredients

    • 1 tablespoon Olive oil
    • ½ small Onion finely chopped
    • 2 Garlic cloves minced or finely pressed
    • 4 cups Riced cauliflower
    • ¼ cup Chicken stock - or vegetable
    • 2 tablespoon Lime juice
    • Zest of 1 lime
    • ⅔ cup finely chopped Cilantro
    • 2 green onions sliced thin
    • Salt and Pepper to taste

    Instructions

    • In a large pan, cook onion in olive oil until soft and translucent. Add garlic, cook for one more minute, stirring contantly.
    • Add cauliflower and chicken stock, stir well to combine.
    • Cook - covered - for 5-6 minutes, or until cauliflower is tender. (Stir every minute or so).
    • Once it reaches desired texture, remove from heat.
    • Add lime juice and zest, cilantro, and green onions. Stir well, season with salt and pepper, to taste.
    • Serve hot!
