"Keto Mojito" is fun to say, AND fun as a Keto Fruit Dip! Whips up in just minutes, and goes SO well with low carb berry skewers!
Fresh fruit skewers in general are a healthy snack for most, but can be too high in carbs for those of us on a more restrictive low carb diet, or living the keto lifestyle.
The solution? Making those fruity kabobs out of berries!
I love accompanying fresh fruit kabobs with a cream cheese dip, so I created this delicious dip - with the bright, fresh flavours of mojito cocktails - to be a keto friendly fruit dip.
These delicious skewers will satisfy your sweet tooth WITHOUT a bunch of sugar - but with plenty of amazing flavor!
Keto Finger Food
These dessert kabobs are not only the perfect snack while low carbing, they’re also the perfect appetizer to make your next event menu a bit more inclusive.
Serve these as a great addition to your baby shower, bridal shower, or pool party menu. They’re always a huge hit on a hot day, so they’re great for any summer party, BBQs, picnics, as well.
Given that they’re red and blue fruit kabobs - with a white dip - they’re the perfect summer treat for your Memorial Day or Fourth of July festivities, also!
Wherever you serve this healthy dessert, it’s a great way to get some fruit in, and NOT feel deprived in any way!
Ingredients
This recipe uses simple ingredients that can be found in pretty much any grocery store.
I like to look at this in two parts: the cream cheese dip, and the keto berry kebabs.
Keto Mojito Cheesecake Dip
To make the keto fruit dip, you will need:
Heavy whipping cream / heavy cream
Cream cheese
Sweetener
Rum Extract or Rum (1 teaspoon if extract, 1-3 tablespoon if actual rum)
Fresh mint leaves
Lime zest
Salt
.
To keep the dip keto friendly, use an Erythritol / Monkfruit Blend Sweetener.
If you’re not keeping keto, granulated sugar or honey work well, also.
Keto Berry Skewers
As is, I used the following selection of fruits:
Fresh Strawberries
Blackberries
Raspberries
Blueberries
These are the most keto friendly fruits, so my favorite fruit to use in this case. The lower the carbs, the more fruit kebabs I can have, after all!
If you’re not keeping keto yourself - or low carb at all - you have more leeway in the variety of fruit you can use.
Red grapes, purple grapes, green grapes, and melon are some of my favorite fruits when I’m not being quite as picky about carbs
Equipment
In addition to the dip ingredients and a variety of fruits, there are a few pieces of equipment that help out with this dessert recipe:
Mini Food Processor
I use a mini food processor to blend the zest, sweetener, and cream cheese together.
You can use a stick blender, electric mixer, or stand mixer if you prefer, but the zest may not end up quite as well incorporated.
Bamboo Skewers
I like to use wooden skewers / wooden sticks, rather than metal skewers for fresh fruit skewers. They look better and are more comfortable, IMHO.
As pictured, I used - 5.9" Acrylic Gem End Bamboo Skewers:
I used the ones with the green gem, to play up the “mojito” theme.
Depending on the size of the sticks, the sizing of the fruit pieces, and how many fruit pieces you want on each of the fruity kabobs, lollipop sticks could be used in a pinch.
The lack of a pointed end makes threading them for difficult, though!
How to Make Keto Mojito Cheesecake Dip
The full recipe is in the recipe card at the end of this post, here is the pictorial walk through.
In a mini food processor, blend the sweetener, mint leaves, lime zest, and salt until smooth.
Add the softened cream cheese, blend until smooth and well combined.
Add the rum / rum extract, blend once more until smooth. Set aside.
Add mojito cream cheese mixture to the bowl, fold until well combined.
Cover with plastic wrap - or transfer to an airtight container - and chill until use.
Keto Berry Skewers
Wash and hull the strawberries, if needed.
Pick through the blackberries, raspberries, and blueberries, discarding any mushy or overly blemished berries.
Thread fruit onto a wooden stick, and arrange in a single layer on a serving platter.
The berries are best served soon after assembling, the dip will be good for 3-4 days in the fridge.
