Fennel Chicken Soup

[Gluten-Free and Low Carb!]

This creamy Fennel Chicken Soup is SUPER satisfying, rich, & hearty, while also tasting like a fancy restaurant soup!  It’s gluten free, keto friendly, and easy to make, too!

YOU WILL NEED: Chicken Stock Heavy Cream Cooked Chicken Small Turnips Small Fennel Bulb Onion Garlic Cloves Dry White Wine Olive Oil Xanthan Gum Black Pepper Salt

Cook turnips, fennel, onion, and garlic in the olive oil until onion is tender and translucent.

Add dry white wine - if using - simmer for 1 minute.     Add chicken stock, simmer for 10 minutes.

Add the heavy cream, stir well.     In a small bowl, combine reserved fennel fronds with xanthan gum, salt and pepper.     Add xanthan gum mixture to the pot, stir well to combine.

Add the chicken to the pot of soup. Turn the burner down to low heat, gently simmer for 5 minutes, or until chicken is warmed through.     Season with additional salt and pepper, to taste.

Serve hot - enjoy!
