YOU WILL NEED: Smooth Peanut Butter Sugar Free Chocolate Chips Chopped Pecans Almond Flour Vanilla Protein Powder Coconut Flour Brown Sugar Substitute White Sugar Substitute Large Eggs Almond Milk Vanilla Extract Baking Powder Salt Xanthan Gum Baking Soda

Combine almond flour, protein powder, coconut flour, baking powder, salt, xanthan gum, and baking soda, set aside.

Cream peanut butter and sugar substitutes until fluffy.

Add eggs, milk, and vanilla, beat until smooth. Slowly dry ingredients mix, carefully mix until smooth.

Add chocolate chips and pecans, stir until well combined. Cover dough with plastic wrap, chill for an hour. Note: This is an important step for keto AND gluten free baking - don't skip it!

Roll balls out of the keto cookie dough, then very slightly flatten each cookie, as shown.

Bake as directed. Cookies will look puffy, but flatten out as they cool.    Enjoy!
