Keto Pierogi Pizza

If you're a fan of perogies, you'll LOVE this low carb perogy pizza! My Keto Pierogi Pizza recipe works up really quickly - using a fathead pizza dough - and is WILDLY satisfying.  It curbs the perogy craving and fills you right up!

YOU WILL NEED: Sharp Cheddar Cheese Frozen Cauliflower Shredded Mozzarella Cream Cheese Super Fine Almond Flour Green Onions Sour Cream Sauerkraut Bacon Butter Large Eggs Baking Powder Xanthan Gum Salt & Pepper

Following the linked recipe, cook, drain, and blend the cauliflower with shredded cheese. Season, set aside. Cook the bacon and onions together.  Drain and set aside.

Measure mozzarella into a microwave-safe bowl. Heat until cheese has melted. While the cheese is melting, combine dry ingredients in a food processor.   Add eggs, blitz once more to fully combine.

Add melted cheese to the food processor, pulse until well combined. You don’t want to see any sections of unmixed cheese.

Use wet hands to form dough into a 12" round on the prepared pan.     Prick all over with a fork, then bake as directed in the linked recipe.

Spread cheesy cauliflower over prepared pizza crust.     Scatter bacon and onion mixture and sauerkraut (if using) across the pizza crust. Top with shredded cheese.

Bake as directed, then garnish with sour cream and green onion slices.

Serve immediately. Enjoy!
