Keto Pumpkin Bars

With Cream Cheese Frosting

These keto pumpkin bars - with cream cheese frosting - are not only tasty, they're also easy to make AND have some protein! A great option for sticking to your low carb diet over Thanksgiving.

YOU WILL NEED: Pumpkin puree Almond flour Sweeteners Protein powder Coconut flour Cream cheese Unsalted butter Vanilla extract Pumpkin pie spice Large eggs Baking powder Xanthan gum Salt See the linked post for full details on the ingredients!

After preparing a pan and heating the oven, mix your dry ingredients together. Set aside.

Whisk your wet ingredients together, then mix into the bowl of dry ingredients.

Transfer batter to prepared baking pan, spreading evenly.     Bake JUST until set in the middle. Do not over cook!     Allow bars to cool completely, before making the frosting

Whip cream cheese & butter together until smooth - I like to use an electric hand mixer for this. Add vanilla and salt, mix well to combine.     Add powdered sweetener, stir well, then whip til fluffy.

Spread frosting over cooled bars, chill or a few hours to set up before slicing and serving.
