Keto Scalloped Potatoes

IMHO, no holiday table is complete without potatoes.  This Keto Scalloped Potatoes recipe uses turnips as an incredibly convincing, tasty substitute.  A perfect Thanksgiving side dish for the whole family!

YOU WILL NEED: Turnips Cheddar cheese Heavy cream Chicken broth Unsalted butter 1 Small onion Garlic cloves Xanthan gum Salt and Pepper

Slice turnips VERY thinly. I like to use a mandolin, as it saves time.

In a medium bowl, toss 1 cup of cheese with the xanthan gum, making sure the xanthan gum is well distributed. Set aside.

Saute onions and garlic in butter until soft. Add heavy cream and chicken stock, whisking well to combine.   Add cheese, stir til melted & smooth. Remove from heat, season with salt & pepper

Layer your turnips & sauce in the pan, following the instructions in the linked recipe.   

Cover with foil, bake as directed.

Remove from oven, scatter remaining cheddar cheese evenly over the top.  Bake until nicely browned.     Serve hot - enjoy!
