Rich and Creamy Keto Eggnog

This festive keto eggnog is sugar free, low carb, super rich, full of flavour, and incredibly easy to make - no raw eggs involved, either! You can even customize with alcohol, if desired.

YOU WILL NEED: Almond Milk Heavy Cream Large Eggs Keto Sweetener Vanilla Extract Ground Nutmeg Salt Optional: Rum, whisky, or brandy

Combine egg yolks and sugar substitute in a mixing bowl, whisk until pale and fluffy. Set aside.     Measure heavy cream, almond milk, nutmeg, and salt into a pot. Bring just to a simmer.

Slowly pour the hot cream mixture into the egg mixture, while whisking it.   Pour egg mixture into the pot, whisking well to combine.

Simmer until it starts to thicken, and reaches 165 F.  Remove from heat, add vanilla (and alcohol, if using), whisk well.

Chill for at least 4 hours before serving.   Enjoy!
