Keto Italian Wedding Soup

Meatballs:
- 1 lb Ground chicken
- 1 Small onion grated
- ¼ cup Almond flour
- ¼ cup Finely chopped flat leaf parsley
- ¼ cup Finely grated Parmesan cheese
- 1 Large egg
- 2 Garlic cloves pressed or finely minced
- ½ teaspoon Dried basil
- ½ teaspoon Dried oregano
- ½ teaspoon Ground black pepper
- ½ teaspoon Salt
Soup:
- 1 pouch Konjac rice
- 4 Garlic cloves pressed or finely minced
- 8 cups Chicken broth Low sodium
- 1 cup Shredded carrot
- 3 cups Baby spinach chopped
- Salt and pepper to taste
- Parmesan Cheese for garnish
Meatballs:
Measure all meatball ingredients in to a large bowl, mix until well blended.
Form into small meatballs - using a heaping teaspoon worth of meat mixture for each meatball. Place rolled meatballs on a baking sheet for now.
Soup:
Drain and rinse the Konjac rice, WELL - at least 2 minutes of rinsing.
Place into a dry soup pot, cook over medium-high heat until excess liquid has cooked off.
Add garlic to the pot, cook for 1 minute.
Add broth, bring to a boil.
Add meatballs, carrot, and baby spinach. Turn heat down to medium, cook until meatballs are cooked through and spinach has wilted.
Season with salt and pepper, to taste.
Garnish with flakes of Parmesan cheese on top.
