Keto Italian Wedding Soup

Ingredients

Meatballs:

  • 1 lb Ground chicken
  • 1 Small onion grated
  • ¼ cup Almond flour
  • ¼ cup Finely chopped flat leaf parsley
  • ¼ cup Finely grated Parmesan cheese
  • 1 Large egg
  • 2 Garlic cloves pressed or finely minced
  • ½ teaspoon Dried basil
  • ½ teaspoon Dried oregano
  • ½ teaspoon Ground black pepper
  • ½ teaspoon Salt

Soup:

  • 1 pouch Konjac rice
  • 4 Garlic cloves pressed or finely minced
  • 8 cups Chicken broth Low sodium
  • 1 cup Shredded carrot
  • 3 cups Baby spinach chopped
  • Salt and pepper to taste
  • Parmesan Cheese for garnish

Instructions

Meatballs:

  • Measure all meatball ingredients in to a large bowl, mix until well blended.
  • Form into small meatballs - using a heaping teaspoon worth of meat mixture for each meatball. Place rolled meatballs on a baking sheet for now.

Soup:

  • Drain and rinse the Konjac rice, WELL - at least 2 minutes of rinsing.
  • Place into a dry soup pot, cook over medium-high heat until excess liquid has cooked off.
  • Add garlic to the pot, cook for 1 minute.
  • Add broth, bring to a boil.
  • Add meatballs, carrot, and baby spinach. Turn heat down to medium, cook until meatballs are cooked through and spinach has wilted.
  • Season with salt and pepper, to taste.
  • Garnish with flakes of Parmesan cheese on top.
