    These low carb chicken meatballs in mushroom sauce are easy to make, and great as a comfort food. Perfect for chilly autumn nights!

    A while back, I was REALLY in the mood for IKEA meatballs... but I also had some mushrooms that really needed to be used up.

    So, I took the original craving and ran with it, making meatballs... but in a creamy mushroom sauce.

    It was fantastic - and quickly became a favourite around here!

    What to Serve with Low Carb Chicken Meatballs in Mushroom Cream Sauce

    There are several ways we serve this dish.

    As pictured, sometimes we serve it over Low Carb Cauliflower Mash - it’s a nice, comforting meal... without the carbs.

    Kind of a play on meatballs and gravy over mashed potatoes.

    Other than that, we’ve served this over zoodles, and over different types of rice substitute.

    Konjac Rice is a VERY convincing rice substitute.

    Looks like rice, has a mouthfeel like rice, and the flavour is totally acceptable - and at zero net carbs!

    Other than that, riced cauliflower or celeriac/celery root are our other go-to sides.

    How to Make Low Carb Chicken Meatballs in Mushroom Sauce

    Full recipe follows, here's the pictorial overview:

    Slice your mushrooms and onions, set aside.

    Mix ground chicken together with the herbs, spices, salt, and pepper.

    Form chicken mixture into meatballs, placing into a nonstick pan along with the olive oil.

    Cook meatballs over medium-high until browned all around - they don’t have to be cooked all the way through.

    Add butter, mushrooms, and onion to the pan, continue cooking until onions are translucent and mushrooms are tender.

    Add stock, sour cream, and thyme to the pan, stirring well to combine.

    Simmer for 10 minutes or until sauce has reduced and thickened.

    Broth and cream added to the pan and cooked down into a thick sauce.

    Season with salt and pepper to taste.

    Serve hot over mashed cauliflower, cauliflower “rice”, or celery root “rice”.

    Ingredients

    Chicken Meatballs

    • 1 lb Ground chicken
    • 1 teaspoon Garlic powder
    • 1 teaspoon Onion powder
    • 1 teaspoon Dried Parsley
    • ½ teaspoon Salt
    • ½ teaspoon Pepper
    • 2 tablespoon Olive Oil

    Mushroom Cream Sauce

    • 1 tablespoon Butter
    • 1 lb Mushrooms sliced
    • 1 Small onion sliced
    • 1 ½ cups Mushroom or chicken stock
    • ½ cup Sour cream
    • ¼ teaspoon Dried thyme
    • Salt and Pepper

    Instructions

    • Mix ground chicken together with the herbs, spices, salt, and pepper.
    • Form chicken mixture into meatballs, placing into a nonstick pan along with the olive oil.
