Colorful Keto Coleslaw
Low carbbing doesn't mean having to forego colour and flavour. This fun, easy keto coleslaw brings both to the table. Great for BBQs and potlucks, too!

- 1 Small savoy cabbage thinly sliced
- 1 ½ cup Shredded purple cabbage
- 1 Carrot peeled and grated
- ½ Red bell pepper thinly sliced
- 2 green onions thinly sliced on a diagonal
- 1 cup Mayo
- ⅓ cup Apple cider vinegar
- 2 tablespoon Sugar substitute
- ½ teaspoon Celery seed
- ½ teaspoon Salt
- ½ teaspoon Ground Black Pepper
In a large bowl, gently toss prepared cabbages, carrot, pepper and green onions. Set aside.
In a separate bowl, whisk together remaining ingredients.
Pour sauce over vegetables, toss to coat evenly.
Cover, chill for at least 1 hour to let flavours mingle.
Serve cold.
