Ingredients
Marinated Bocconcini & Olives
¼cupOlive oil
1teaspoonDried Oregano
1teaspoonFinely chopped Fresh Italian Parsley
2Garlic clovespressed or finely minced
Ground Pepper
Salt
14Mini Bocconcini
14Jumbo Green Olives with Pimento
14Pitted black olives
Assembly:
6OzProvolone Cheese
7slicesMortadella
7slicesDeli Ham

Instructions
Marinated Bocconcini & Olives
Whisk together the olive oil, oregano, parsley, and garlic; season with salt and pepper, to taste.
Drain mini bocconcini and olives, blot lightly with paper towels. Add cheese and olives to the marinade, toss gently to coat everything.
Cover and chill for at least 1 hour.
Assembly
Use a sharp knife to cut the Provolone cheese into 14 cubes.
Cut Mortadella and ham slices in half, fold and/or roll each half into bite sized pieces.
Fold each slice of salami in half, then in half again (as you’re spearing them!).
Alternating meats, cheeses, and olives, thread 1 piece of each ingredient: mini bocconcini, provolone cubes, black olives, green olives, and each of the 3 meats - onto a bamboo skewer.
Repeat with remaining ingredients.
Serve immediately, or cover and chill until ready to serve. Best when used within 2 days of assembling.
