Keto Mediterranean Orzo Salad with Chicken [Gluten Free]

Ingredients

Dressing:

  • ½ cup Olive Oil
  • cup Fresh Lemon Juice
  • Zest of 1 Lemon
  • 3 Garlic Cloves pressed or finely minced
  • ¾ teaspoon Dried Oregano
  • Salt
  • Ground Black Pepper

Chicken & Orzo:

  • 2 Large Boneless Skinless Chicken Breasts
  • 1 tablespoon Olive Oil
  • 3 cups Chicken Broth
  • 8 oz Kaizen Rice

Salad:

  • ½ English Cucumber
  • cup Crumbled Feta 4 oz
  • ½ cup Cherry Tomatoes halved
  • ¼ - ⅓ cup Pitted Kalamata Olives halved
  • ¼ cup Thinly Sliced Red Onion
  • ¼ cup Fresh Mint thinly sliced

Instructions

Dressing:

  • Using an immersion blender or milk frother, blitz dressing ingredients - except salt and pepper - together until emulsified. Season with salt and pepper, set aside.

Chicken and Orzo:

  • Trim chicken breasts if needed, chop into bite sized pieces. Season with a bit of salt and pepper.
  • Saute chicken breasts and olive oil in a nonstick pan over medium heat until chicken is cooked through. Remove from heat and chill until use.
  • In a medium pot, bring the chicken broth to a boil. Add Kaizen rice, turn heat down to low, and GENTLY simmer for 6-8 minutes, until cooked through.
  • Drain, rinse with cold water, and chill until cold.
  • Note: I’ll usually just mix the chicken and orzo in a large bowl, then chill them together.

Salad:

  • Once pasta is chilled, add it to a large bowl, along with the chilled chicken and the remaining salad ingredients and the dressing.
  • Gently toss to combine, season with salt and pepper, to taste.
  • Serve immediately, or let it chill for 30 minutes to let the flavours blend a bit.
