- 1 ½ cups Unsweetened Almond Milk
- ⅔ cup Sugar Free White Chocolate Chips We use Lily's, and that's what the nutritional info is based on.
- ½ cup Heavy Cream AKA whipping cream or heavy whipping cream
- ½ teaspoon Pure Vanilla Extract
- ¼ teaspoon Peppermint Extract
- Optional garnishes: Whipped Cream, Chopped Sugar Free Mints, etc
Measure the almond milk, sugar free white chocolate chips, and cream into a small saucepan.
Heat over medium low heat - whisking constantly - until the chocolate has fully melted and combined with the liquid.
Remove from heat, stir in the Vanilla and Peppermint extracts.
Divide peppermint white hot chocolate into 2 mugs, garnish as desired, and serve immediately.
21 grams of carbs per serving come from the sugar alcohols in the white chocolate chips. Add that to the 16 grams of fiber, and you have 37 grams of deductible carbs - leaving you with 11 net grams of carbs per serving.
Yes, it's higher carb than many of my other recipes, but that's also a fraction of the ~70 grams of net carbs in the real thing!
