Sugar Free Pistachio White Hot Chocolate
Based on a favourite Second Cup drink, my Sugar Free Pistachio White Hot Chocolate is just as delicious - with a only a fraction of the carbs!

- 2 tablespoon Pistachio Butter
- 2 cups Unsweetened Almond Milk
- ⅔ cup Sugar Free White Chocolate Chips We use Lily's, and that's what the nutritional info is based on.
- pinch Salt if your pistachio butter is salted, skip this.
- ¼ teaspoon Almond Extract
- ¼ teaspoon Pure Vanilla Extract
- Optional garnishes: Whipped Cream, Chopped Pistachios, etc
Measure the pistachio butter and a small amount of the milk into a small saucepan, whisk until smooth.
Add the rest of the milk - a little at a time - whisking to fully disperse the pistachio butter.
Add the sugar free white chocolate chips and salt. Heat over medium low heat - whisking constantly - until the chocolate has fully melted and combined with the milk.
Remove from heat, stir in the almond and vanilla extracts.
Divide pistachio white hot chocolate into 2 mugs, garnish as desired, and serve immediately.
21 grams of carbs per serving come from the sugar alcohols in the white chocolate chips. Add that to the 17 grams of fiber, and you have 38 grams of deductible carbs - leaving you with 12 net grams of carbs per serving.
Yes, it's higher carb than many of my other recipes, but that's also a fraction of the ~80 grams of net carbs in the real thing!
