Greek Salad Skewers

These Easy Greek Salad Skewers come together in just minutes, and are sure to be a hit at any party. Bonus: They're low carb & keto friendly!

Ingredients

Marinated Feta

  • 2 tablespoon Olive Oil
  • 1 ½ tablespoon Red wine vinegar
  • 1 Garlic clove pressed or minced
  • ½ teaspoon Dried Oregano
  • ¼ teaspoon Dijon Mustard
  • Salt and Pepper
  • 8 oz Feta Cheese drained

Greek Salad Skewers

  • 1 English Cucumber
  • 15 Grape Tomatoes or cherry tomatoes
  • 30 Pitted Kalamata Olives

Instructions

Marinated Feta

  • In a small bowl, whisk together oil, vinegar, garlic, oregano, and mustard. Season with salt and pepper, to taste.
  • Cut feta cheese into 15 cubes or so (The number of cubes will determine how many skewers you’ll get).
    Blot lightly with a paper towel, then transfer to the bowl of marinade.
  • Gently toss to coat the cheese in marinade. Cover with plastic wrap and chill for at least 1 hour.

Greek Salad Skewers

  • Cut the cucumber into ¼-1/2" slices, then cut each slice in half.
  • Thread skewer ingredients onto bamboo skewers - 1 piece of cucumber, 1 olive, a feta cube, a tomato, another olive, then finishing with a second piece of cucumber.
  • Serve immediately, or cover and chill until use. Should be used within a day or two.

Notes

After subtracting the 1 gram of fiber, these skewers come in at 1 gram of net carbs per skewer.
