Ingredients

Keto Mojito Cheesecake Dip

  • ¼ - ⅓ cup Sweetener of choice See blog post.
  • ¼ cup fresh mint leaves
  • Zest of 1 lime
  • Pinch salt
  • 8 oz Cream cheese softened
  • or 1-2 tablespoon Rum or 1 teaspoon Rum extract
  • 1 cup Heavy whipping cream

  • Strawberries
  • Blackberries
  • Raspberries
  • Blueberries

Instructions

Keto Mojito Cheesecake Dip

  • In a mini food processor, blend the sweetener, mint leaves, lime zest, and salt until smooth.
  • Add the softened cream cheese, blend until smooth and well combined. Add the rum / rum extract, blend once more until smooth. Set aside.
  • In a large bowl, use an electric hand mixer to beat the heavy cream until stiff peaks form.
  • Add mojito cream cheese mixture to the bowl, fold until well combined.
  • Cover and chill until use.

Keto Berry Skewers

  • Wash and hull the strawberries, if needed.
  • Pick through the blackberries, raspberries, and blueberries, discarding any mushy or overly blemished berries.
  • Thread the berries onto bamboo skewers, and serve with the keto mojito cheesecake dip.

Notes

9 grams of total carbs per serving come from sugar alcohols, leaving 2 net grams per serving of dip.
