Keto Mojito Cheesecake Dip
- ¼ - ⅓ cup Sweetener of choice See blog post.
- ¼ cup fresh mint leaves
- Zest of 1 lime
- Pinch salt
- 8 oz Cream cheese softened
- or 1-2 tablespoon Rum or 1 teaspoon Rum extract
- 1 cup Heavy whipping cream

- Strawberries
- Blackberries
- Raspberries
- Blueberries
Keto Mojito Cheesecake Dip
In a mini food processor, blend the sweetener, mint leaves, lime zest, and salt until smooth.
Add the softened cream cheese, blend until smooth and well combined. Add the rum / rum extract, blend once more until smooth. Set aside.
In a large bowl, use an electric hand mixer to beat the heavy cream until stiff peaks form.
Add mojito cream cheese mixture to the bowl, fold until well combined.
Cover and chill until use.
Keto Berry Skewers
Wash and hull the strawberries, if needed.
Pick through the blackberries, raspberries, and blueberries, discarding any mushy or overly blemished berries.
Thread the berries onto bamboo skewers, and serve with the keto mojito cheesecake dip.
