- 10 oz Frozen spinach thawed and drained
- 1 Shallot
- 1 tablespoon Olive oil
- 1 14 oz can Artichoke hearts drained and finely chopped.
- 2 Garlic cloves pressed or minced
- 8 oz Cream cheese softened
- ¼ cup Mayonnaise
- ¼ cup Sour cream
- ½ cup Shredded Mozzarella or Provolone cheese
- ½ cup Shredded Parmesan cheese
- Salt and pepper
Preheat oven to 350 F. Spray a baking dish - I like to use a Pyrex loaf pan - with pan spray, set aside.
In a large nonstick pan, cook spinach and shallow in olive oil until shallot is tender and water has cooked off.
Add artichoke hearts and garlic, stirring well to combine.
Add cream cheese to the pan, stirring to break it up and combine.
Once cream cheese is smooth and well combined, remove pan from heat.
Add remaining ingredients, stirring well to combine. Season with salt and pepper, to taste.
Transfer mixture to prepared pan, bake for 20-25 minutes, until bubble and browned on top.
