This Keto Spinach Artichoke Dip recipe is easy to make, super tasty, and satisfying. It's the perfect low carb food for any party or potluck! Serve this cheesy dip with low carb dippers to keep it low carb diet friendly.
While you’d normally not think of dips as diet food, most are at least relatively low carb dips (especially if homemade).
Dips are usually based with a lot of fat - cheese, mayo, sour cream. Think of dill dip, buffalo chicken dip, even some layered taco style dips (hold the beans!) - all inherently low carb friendly dips.
... it’s all about what you have on hand to dip in them - more on that in a bit!
Augh. Why do onions and garlic have to be so carbby, anyway!?
Anyway, this low carb spinach artichoke dip is a popular recipe whenever I serve it, whether my guests are looking for low carb appetizers or not.
... it’s like... stealth diet food, lol.
Anyway, let’s get to it.
Nutrition Info
This particular recipe is not only a crowd favorite in general, it’s great for any low-carb diet, and is ketogenic diet friendly, as well.
Per serving, you’re looking at 5 grams of protein, 4 grams of total carbs, 1 gram of fiber, or 3 grams of net carbs.
For reference this recipe makes about 4 cups of dip, and I’m assuming ⅓ cup per serving.
Artichoke Spinach Dip Ingredients
This recipe takes a handful of ingredients, but the whole ingredient list is made of common ingredients that should be easily found at any grocery store.
You will need:
Spinach
The main ingredient! I use frozen spinach that’s been thawed and well drained, just for the sake of ease.
You could use about 1 lb of fresh spinach if you prefer, just chop and sautee it down to nothing - ALL excess moisture cooked off - before using it.
Everything Else
Shredded Mozzarella or Provolone cheese
Shredded Parmesan cheese
Canned artichoke hearts
Cream cheese
Mayonnaise
Sour cream
Shallot
Garlic cloves
Olive oil
Salt and Black pepper
How to make Easy Keto Spinach Artichoke Dip
The full recipe follows - in the recipe card at the end of this post. This is the pictorial overview, with additional tips and info.
Preheat oven to 350 F. Spray a baking dish - I like to use a Pyrex loaf pan - with pan spray, set aside.
Note: If you’re making this in a cast iron skillet, you can do so start to finish in it. Don’t bother greasing another oven safe dish, just put your skillet right into the oven.
Chop the artichokes. You can chop to whatever size you like, but smaller makes for easier dipping!
Squeeze your spinach well to remove ALL excess water. I’ll usually squeeze and then press between paper towels, for good measure.
Add artichoke hearts and garlic, stirring well to combine.
Add softened cream cheese to the pan, stirring to break it up and combine.
Add remaining ingredients to the spinach and cream cheese mixture, give it a good stir to combine. Season with salt and pepper, to taste.
Transfer mixture to prepared pan (In this case, 2 ramekins!).
Leftovers
Once cooled, leftovers can be stored in an airtight container in the fridge for a few days.
To reheat the next day, transfer dip to a microwave-safe bowl and heat - stirring often - until hot a gooey.
You can also use a crock pot to reheat, but you might want to add a little heavy cream to thin it out.

Low Carb Spinach Dip Variations
This recipe is fantastic as it is, but there are always different ways you can customize it to your tastes. Here are a few ideas for you:
Swap out the Cheese
Want a bit more kick? Swap out all or part of the Mozzarella cheese for something like Gruyere cheese, or even a smoked cheese.
(Actually smoked will taste a LOT better than “smoke flavoured”, IMHO!).
You could also swap out all or part of the cream cheese for goat cheese or Feta.
Swap out the Spinach
Sure, it won’t be a spinach artichoke dip anymore, but you can swap out the spinach in favour of kale, beet greens, chopped collard greens, or whatever else you like.
Add Bacon
Before making the dip, chop and cook ½ lb of bacon, and set it aside. Use some of the bacon fat to cook the spinach and shallots in, rather than the olive oil in the recipe.
Stir the cooked bacon in just before transferring to the baking dish.
Add Some Heat
Try sauteeing a finely chopped jalapeno (or two!) with the spinach or shallot.
Alternately, you can add a bit of hot sauce, and/or some red pepper flakes to the mixture, before doling it out into the baking pan.
Use Marinated Artichokes
That’s it, that’s the whole variation - marinated instead of “packed in water” artichokes.
Serve it as a Main Course
Chop up some raw chicken, brown in a bit of olive oil.
Once cooked through, add zucchini noodles and 1-2 cups of this dip to the pan, stirring gently to coat. Serve once the zucchini is JUST heated through.
